焦恩俊于1967年11月7日生于中国台湾省嘉义市，祖籍山东青岛。嘉义市古名“诸罗山”，亦名桃城，以其古城形如桃而名，桃之尾尖，在今中央七彩喷水一带，市民惯称桃仔尾。
Jiao Enjun was born on November 7, 1967 in Jiayi City, Taiwan Province, China. Jiayi city was known as "Zhuluo mountain" in ancient times, also known as peach city. It is famous for its ancient city's shape of peach. The tail of peach is sharp. In the area of colorful water spray in the central area, people often call it taoziwei.
嘉义是台湾交趾陶的发源地，因而有“交趾陶的故乡”之称，日人又称之为“嘉义烧”。交趾陶为一种低温多彩釉，是融合了软陶与广窑的一种陶艺，且包容了捏塑、绘画、烧陶等技艺及宗教文化的民俗工艺，堪称民间艺术的国宝。
Jiayi is the birthplace of Jiaozhi pottery in Taiwan, so it is called "hometown of Jiaozhi pottery" and also called "Jiayi Shao" by Japanese. Jiaozhi pottery is a kind of low-temperature and colorful glaze. It is a kind of ceramic art combining soft pottery and Guangyao kiln. It also contains the skills of kneading, painting, firing pottery and religious culture. It can be called the national treasure of folk art.
因崇拜李小龙，焦恩俊学过跆拳道、练武术、双截棍。1985年，18岁的焦恩俊高中刚毕业便到台北都会区，参加第12期中影演员训练班，以第2名的成绩毕业。
Because of his worship of Bruce Lee, Jiao Enjun learned Taekwondo, practiced martial arts and double truncation stick. In 1985, just after graduating from high school, Jiao Enjun, 18, went to the Taipei metropolitan area to participate in the 12th China film actor training class and graduated second.
1985年，18岁的焦恩俊参加中影演员训练班。1994年参演《七侠五义》饰演展昭一角。1998年在琼瑶剧《苍天有泪》中饰演反派人物，1999年凭借《小李飞刀》李寻欢一角获得关注。
In 1985, 18-year-old Jiao Enjun took part in a training class for Chinese film actors. In 1994, he played the role of Zhan Zhao in seven swordsmen and five righteousness. In 1998, he played the villain in Qiongyao's drama "heaven has tears". In 1999, he got attention for his role as Li xunhuan in "Xiao Li Throwing Knife".
2005年，饰演古装神话剧《宝莲灯》中亦正亦邪的二郎神杨戬创下央视八套黄金时段9.1的收视纪录。2008年，焦恩俊与前经纪人Amy再度携手，在北京举行签约新闻发布会，正式加盟星之国际。
